THE ‘THREE LILY’S’ – OUR STORY

In 2020 Allan Waters and his life partner Lily Titmus decided to open a Cellar Door selling Gin, Liqueur, Sweet Wine, Lollies and Gourmet Foods.

Given Lily’s Indian heritage, making gin seemed like a perfect choice.

On discussing many names, Allan’s niece Julie came up with the name ‘Three Lily’s’ as his paternal grandmother’s name was Lily, his mother’s middle name was Lily, and of course his life partner’s name is Lily.

This is a tribute to the three very special people who have made a huge impact on Allan’s life. Consequently, under this special name, we are producing a series of gins.

LOCATION, CLIMATE AND SOIL
Surrounded by the sea on three sides, The Margaret River region enjoys a strong ‘maritime climate’. In temperature terms, the overall climate is similar to that of the French Bordeaux Regions of Pomerol and St Emillion. It’s no wonder that the quality of the cabernet sauvignon, merlot and chardonnay is so good.

The Margaret River wine region meanders gracefully over 80km up the southwest coast of Western Australia, in a narrow strip spreading between the Indian Ocean and the towering Marri forests running to the east. The soils are predominately gravelly or gritty sandy loams that have formed directly from the underlying granite and ancient bedrock – hallowed ground for the premium vines that flourish here. The winery lies is located on seventeen picturesque hectares of rich ochre soils shaded by tall stands of native trees 4 km north of the picture book town of Cowaramup, known locally as Cowtown due to the many dairy farms in the area and 280 km south of the Western Australian capital, Perth.

THE WINERY AND WINEMAKING
It was built in 1998 by the current Owner, with its first vintage in 1999. Originally solely a contract winemaking facility, the Winery later commenced producing wine under it’s own labels, while continuing to make wine for other vineyards.

It was originally called Harmans Ridge Estate and is now known as Margaret River Winemakers.

To fully express the fruits of this great terroir, we employ experienced, skilled and passionate staff, along with the resources of our 5 star James Halliday rated winery. Here time-honoured traditional methods and skills are combined with state-of-the-art, ‘new world’ winemaking technology to vintner a range of premium and super premium wines of exceptional quality.

Our winemaking team ensure nothing is overlooked, no corners cut and only the best winemaking practices are employed. This creates wines that are always varietally correct and unmistakably Margaret River and whether you want to enjoy them now or lay down for many rewarding years to come. The winery is also organically certified

THE INDIAN CONNECTION
In 2005 the winery commenced exporting wine to India. Then in 2007 the owner helped the distributor, also the owner of a distillery, to plant a vineyard for use in making brandy.

Cuttings were sent from Margaret River and grafted onto Indian rootstock. Subsequently the owner often stayed at the distillery when checking on the vines and later on 2010 while helping the local winemaking staff during their first vintage. This resulted in an interest in the gin making process first hand. Not to mention a love of drinking gin. This eventually resulted in the winery purchasing a still to produce its own gin.

The rest is history as they say.
